This Pork Bowl is a must when you need a put together a hassle-free, hearty weeknight dinner.
- 500g Lynca Meats ground pork
- 1 tbsp grated ginger
- 1 tsp crushed garlic
- 1 tbsp oil
- 3 tbsp soy sauce
- 4 spring onion stalks, chopped
- ½ cup corn
- ½ cup red kidney beans
- 1 cup rice of your choice, cooked according to package instructions
- Heat the oil in a large pan over medium-high heat. Add pork, ginger and garlic and fry until it has turned brown.
- Stir in soy sauce, add kidney beans and corn, and allow to simmer for 2 – 3 minutes.
- Toss in the chopped spring onion and cook for another minute before removing from heat.
- Place rice in a bowl, add some pork on top and enjoy!
