Rainbow Pork Salad

If you think this dish looks good, you’re in for a surprise because it tastes even better! Tuck in and treat yourself.

INGREDIENTS:

150g Lynca Meats pulled pork
1 cup shredded purple cabbage
1 cup corn
½ cup sliced cucumber
½ cup sliced red peppers
½ cup guacamole

DRESSING:

1 tbsp olive oil
2 tbsp lime juice
1 tbsp barbeque sauce
Salt and pepper to taste

METHOD:

  1. Assemble the salad by arranging vegetables in rainbow colour order or simply throw them in and mix.
  2. In a small bowl or cup, combine the olive oil, lime juice, barbecue sauce, salt and pepper. Mix well and drizzle over salad.
  3. Enjoy with a side of guacamole.
