How to cook the perfect Gammon this holiday season

Ingredients
  • Olive oil
  • 1 large gammon
  • 3-4 Pink lady or royal gala apples sliced
  • Pre-boiled Potatoes sliced into Hasselback potatoes
  • 1 Cup de-seeded cherries (canned or fresh)

 

Basting

  • 1/2 cup cherry jam
  • 1/4 cup of brandy
  • 1-2 Tbsp balsamic vinegar
  • 1 Tbsp soy sauce
  • 4-5 star anisé seeds
  • 2 crushed garlic cloves
  • Salt and pepper
  • Fresh Rosemary to serve

Instructions:

  • Preheat your air fryer to 200°C.
  • Place the Gammon slices in the air fryer basket, leaving space between them to cook evenly.
  • Cook the Gammon slices for about 8-12 minutes, depending on the thickness of the slices and the desired level of crispiness. You may need to flip the slices halfway through the cooking time.
  • Use a meat thermometer to check the internal temperature. It should reach at least 160°F (71°C) for safe consumption.
  • Once done, remove the Gammon slices from the air fryer and let them rest for a few minutes before serving.
  • Remember that the cooking times may vary depending on your specific air fryer model, so it’s a good idea to consult the manufacturer’s instructions for cooking meat. Cooking Gammon in an air fryer can give it a nice crispy texture, making it an alternative to traditional cooking methods.

 

If you don’t have an air-fryer here are instructions on how to cook a Gammon in the oven.

Cooking a Gammon in the oven is a straightforward process. Here’s a basic method for roasting Gammon.

Instructions:

  • If your Gammon joint is uncooked or needs preparation, soak it in cold water for a few hours or overnight to reduce saltiness. If it’s a precooked Gammon, this step is not necessary.
  • Preheat your oven to 160°C.
  • Place the Gammon joint in a large pot and cover it with water. Add optional flavourings like bay leaves, cloves, or brown sugar if desired. Bring the water to a boil, then reduce the heat to a simmer. Allow it to simmer for about 45-60 minutes per kg. This will help remove excess salt and add flavour.
  • Remove the Gammon from the pot and let it cool slightly. Use a sharp knife to score the fat in a diamond pattern. You can also apply a glaze at this point if you like. A typical glaze is a mixture of brown sugar and mustard, but you can use other combinations.
  • Place the Gammon joint on a rack in a roasting pan. Bake it in the preheated oven for about 45-55 minutes per kg. Baste the Gammon with the glaze or juices from the pan a few times during the cooking process.
  • Once done, remove the Gammon from the oven and let it rest for 15-20 minutes before carving. This helps keep the meat juicy.
  • Carve the Gammon into slices and serve.
