- 400g Lynca Meats pork fillet, thinly sliced
- 3 cloves garlic, finely chopped
- 2 tbsp ginger crushed
- 1 tbsp coconut oil
- 2 tbsp oyster sauce
- 200 ml coconut milk
- ½ cup carrots, shredded
- ½ cup spring onion, finely sliced
- ½ cup sugar snap peas, shredded
- 2 red or yellow peppers, diced
- Heat coconut oil in a wok on highest heat and fry the garlic and ginger for 1 minute.
- Add the pork and stir until it is cooked through.
- Add the oyster sauce and coconut milk and stir to combine and heat.
- Add the shredded vegetables and toss until slightly softened.
