We love fajitas because they go with almost everything – especially this delicious pork filling. Bonus: these Pork Fajitas are perfect for fast, mid-week dinners.
- 500g Lynca Meats pork neck
- 2 tbsp olive oil
- Salt to taste
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 1 orange pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 tbsp minced garlic
- 1 tsp ground cumin
- 1 tsp chilli flakes
- 1 tomato cubed
- Juice of 1 lime
- 8 tortillas, warmed
- In a large pan heat oil.
- Add pork, onion, garlic, cumin and chilli flakes and fry until browned.
- Add all peppers and tomato and simmer until soft.
- Add lime juice and serve hot in tortillas with sides of your choice.
