We love fajitas because they go with almost everything – especially this delicious pork filling. Bonus: these Pork Fajitas are perfect for fast, mid-week dinners.
Ingredients
  • 500g Lynca Meats pork neck
  • 2 tbsp olive oil
  • Salt to taste
  • 1 red pepper, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 orange pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 tbsp minced garlic
  • 1 tsp ground cumin
  • 1 tsp chilli flakes
  • 1 tomato cubed
  • Juice of 1 lime
  • 8 tortillas, warmed
method
  1. In a large pan heat oil.
  2. Add pork, onion, garlic, cumin and chilli flakes and fry until browned.
  3. Add all peppers and tomato and simmer until soft.
  4. Add lime juice and serve hot in tortillas with sides of your choice.
