Ingredients
  • 500g baby potatoes ( chunky diced sweet potatoes are also great!)
  • 500g of your favourite pork sausages (defrosted if frozen)
  • 1 red onion, peeled and thickly sliced
  • 2 cloves garlic, peeled and sliced
  • 200g cherry tomatoes
  • 3 Tablespoons Olive Oil
  • Salt and pepper
method

First, preheat the oven to 200°C. 

Boil the baby potatoes in lightly salted water until they are tender to the fork, then drain. Place them in your trusty baking tray and use the back of a spatula to squash them a little – this gives you more surface area for extra crispiness later on.

Add your tomatoes, onion, garlic and sausages to the tray. Drizzle over the olive oil and season to taste with salt and pepper. Stir to coat all the ingredients evenly with the olive oil. Roast the sausage tray bake for 20-30 minutes until the potatoes are crisp and golden and the sausages are cooked through. Turn the sausages halfway through cooking to brown evenly.

Enjoy with a simple, crisp salad and a slice of crusty bread. Any leftover sausage makes a delicious sandwich filling for the next day!
