- 1 kg Lynca Meats pork shoulder, minced
- 2 tablespoons olive oil
- 2 onions, finely chopped
- 2 garlic cloves, crushed
- ½ tablespoon curry powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup milk
- ½ cup fresh breadcrumbs
- 2 tablespoon hot chutney
- ½ cup raisins
- 2 large eggs, lightly beaten
- Bay leaves
- Fry the pork mince in half the olive oil. In a separate pan fry the onion, raisins, garlic, curry power & other spices in the rest of the olive oil until soft. Combine the mince and onion and raisin mixture.
- Soak the breadcrumbs in ½ a cup of milk until soft and add to the pork mince and onions, together with the chutney.
- Place in an oven dish.
- Mix the remaining milk with the eggs. Pour over the meat in the oven dish and place bay leaves on top. Bake for 1 hour or until cooked at 180°C. Serve with yellow rice.
