Ingredients
  • 1 kg Lynca Meats pork shoulder, minced
  • 2 tablespoons olive oil
  • 2 onions, finely chopped
  • 2 garlic cloves, crushed
  • ½ tablespoon curry powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup milk
  • ½ cup fresh breadcrumbs
  • 2 tablespoon hot chutney
  • ½ cup raisins
  • 2 large eggs, lightly beaten
  • Bay leaves
method
  1. Fry the pork mince in half the olive oil. In a separate pan fry the onion, raisins, garlic, curry power & other spices in the rest of the olive oil until soft. Combine the mince and onion and raisin mixture.
  2. Soak the breadcrumbs in ½ a cup of milk until soft and add to the pork mince and onions, together with the chutney.
  3. Place in an oven dish.
  4. Mix the remaining milk with the eggs. Pour over the meat in the oven dish and place bay leaves on top. Bake for 1 hour or until cooked at 180°C. Serve with yellow rice.
