Tips for Cooking Pork Chops on a Braai

September 4, 2024

Cooking Pork Chops on a braai makes for delicious, juicy meat with a smoky flavour.

Here are some tips to help you get the best results:

1. Choose the Right Cut

  • Opt for Pork Chops at least 2.5 cm thick to prevent them from drying out on the braai.
  • Bone-in Pork Chops tend to retain moisture better and add more flavour.

2. Marinate for Flavour

  • Marinate the Pork Chops for at least 30 minutes to a few hours. A simple marinade of olive oil, garlic, lemon juice, herbs (like rosemary or thyme), and seasoning works well.
  • Alternatively, you can use a dry rub with spices like paprika, black pepper, garlic powder, and some brown sugar for a sweet and savoury crust.

3. Preheat the Braai

  • Ensure your braai is preheated to medium-high heat. You want a good sear on the outside while keeping the inside juicy.
  • If using charcoal, make sure the coals are evenly distributed and glowing red with a thin layer of ash.

4. Oil the Grill Grates

  • Lightly oil the grill grates to prevent the Pork Chops from sticking. To do this safely, use tongs and a paper towel dipped in oil.

5. Sear and Cook

  • Place the Pork Chops on the grill and sear them on each side for 2-3 minutes over direct heat. This will create a nice crust.
  • After searing, move the Pork Chops to a cooler part of the grill (indirect heat) to finish cooking. Close the lid if your braai has one.

6. For those with MEAT THERMOMETERS

  • Cook the Pork Chops until they reach an internal temperature of 63°C (145°F) for medium-rare or up to 71°C (160°F) for well-done.
  • Use a meat thermometer to ensure accuracy and avoid overcooking to prevent dryness.

7. Rest the Meat

  • After removing the Pork Chops from the braai, let them rest for 5-10 minutes. This redistributes the juices, resulting in a more tender and flavourful chop.

8. Serve with a Squeeze of Lemon or Sauce

  • A squeeze of lemon juice or a drizzle of your favourite sauce (like chimichurri or BBQ sauce) can enhance the flavour.

These tips should help you achieve perfectly grilled Pork Chops that are full of flavour and beautifully tender. Enjoy your braai! 🔥
