Now this is our kind of salad! Follow the instructions below for pork that’s so tender it’ll practically fall apart and melt in your mouth.
- 1 cups Lynca Meats pork roast for pulled pork from our pickled range
- ½ cup cooled cooked white rice
- ½ an avocado, peeled and sliced
- ½ cup of sliced cherry tomatoes
- 1 cup lettuce of your choice
- ½ tin of whole kernel corn
FOR THE DRESSING:
- Juice of 1 lime
- ½ tsp salt
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
- Preheat oven to 180°C. Place pickled pork into a casserole dish. Cover with a lid and roast for 4-5 hrs or until the pork is very tender and falls apart. Shred the pork with a fork and then refrigerate until cool.
- Layer or toss all salad ingredients together in large bowl.
- In a separate bowl, combine all dressing ingredients and mix well. Pour dressing over salad and enjoy.
