Now this is our kind of salad! Follow the instructions below for pork that’s so tender it’ll practically fall apart and melt in your mouth.
Ingredients
  • 1 cups Lynca Meats pork roast for pulled pork from our pickled range
  • ½ cup cooled cooked white rice
  • ½ an avocado, peeled and sliced
  • ½ cup of sliced cherry tomatoes
  • 1 cup lettuce of your choice
  • ½ tin of whole kernel corn

FOR THE DRESSING:

  • Juice of 1 lime
  • ½ tsp salt
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
method
  1. Preheat oven to 180°C. Place pickled pork into a casserole dish. Cover with a lid and roast for 4-5 hrs or until the pork is very tender and falls apart. Shred the pork with a fork and then refrigerate until cool.
  2. Layer or toss all salad ingredients together in large bowl.
  3. In a separate bowl, combine all dressing ingredients and mix well. Pour dressing over salad and enjoy.
